APRIL - Pizza




Cooking Club this month will be Tuesday, April 12th at 7:00 pm. Meta will be hosting and the theme is PIZZA.


Meta will provide sauce and dough so bring your favorite toppings and we'll enjoy hot homemade pizza. Sounds delicious!

  1. Pretzel Fruit Pizza

    3 cups finely crushed pretzels
    2/3 cup sugar
    1 1/4 cups cold butter or margarine
    1 (14 ounce) can sweetened condensed milk
    1/4 cup lime juice
    1 small container whipped topping
    6-7 cups Assorted fresh fruit

    In a bowl, combine pretzels and sugar; mix well. Cut in butter until mixture resembles coarse crumbs. Press into a 14-in. pizza pan. Bake at 375 degrees F for 8-10 minutes or until set. Cool then refrigerate for 30 minutes.
    Meanwhile, in a bowl, combine milk and lime juice. Fold in whipped topping; spread over crust. Cover and chill. Top with fruit just before serving.

  2. Spinach Salad

    I know it is Pizza night - but here is the salad I brought:

    1 10 oz. pkg Spinach
    1/2 lb. bacon, cooked and crumbled
    1 cup slivered almonds - toasted at 350 for 8 min.

    1 granny smith apple, sliced thin
    Toss above ingredients. In blender mix dressing and toss with salad just before serving.

    Dressing (combine in blender):
    1/4 cup sugar
    1/3 cup oil
    1/4 tsp. salt
    1 Tbs. red onion - chopped
    3 Tbs. cider vinegar

  4. Pizza is a huge tradition in our family! Here's our dough recipe:
    Dissolve 3T. yeast and 1T. sugar in 1/2 C. warm water
    Mix and let stand a few minutes.
    Add:
    4 C. warm water
    4 T. sugar
    1 T. salt
    1/2 C. oil
    10-12 C. flour

    My favorite kind of pizza that we make is Spicy Buffalo Chicken. There's not really a recipe, but I'll try.

    In a skillet, cook one chicken breast in some Frank's Hot Sauce (I just swirl it around the pan a couple times, so maybe 5 tablesoons?) Cook up some bacon, chop up 1/2 a red onion. Add some more Frank's to the pizza sauce and spread across your dough. (How much depends on how spicy you want your pizza). Top with mozzarella, chicken, onion, bacon and blue cheese. Cook at 425 until it's as done as you like.

    I'm sorry I missed this. Any idea when we'll have cooking club around our parts again? I'd be more inclined to go if it was at someone's house that was closer and that I knew.

    A couple more theme ideas: muffins and weird substitutions.
