February 2011 - Your "Go To" Dish

  1. Oatmeal Cake

    1½ cups boiling water
    1 cup rolled oats
    ½ cup shortening
    1 cup brown sugar
    1 cup sugar
    2 eggs, well beaten
    1½ cups flour
    1 teaspoon cinnamon
    ½ teaspoon nutmeg
    1 teaspoon baking soda
    ½ teaspoon salt


    Pour boiling water over oats and let stand until cool. Cream the shortening with sugar and eggs until fluffy. Add oats and water mixture. Sift flour with other dry ingredients and blend into creamed mixture. Pour into greased and lightly floured 9x13 baking pan. Bake at 350 degrees for 35 to 45 minutes or until cake tests done. Immediately spread topping on baked cake.

    Topping for Oatmeal Cake
    Ingredients:
    ½ cup butter or margarine
    1 cup brown sugar
    1/3 cup evaporated milk
    1 cup coconut
    1 cup nuts, chopped
    1 teaspoon vanilla
    Spread topping on hot cooked cake and return to oven and broil 1-2 min.

  3. Recipe for: Chocolate Chip Cookie Bars
    A Klopp family favorite anytime.

    Bake at375oF for 15-20 minutes.

    Ingredients
    2 1/4 cup flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 cup soft margarine
    3/4 cup white sugar
    3/4 cup brown sugar
    1 teaspoon vanilla
    1/2 teaspoon water
    2 eggs
    1 6 oz package semi-sweet or mint chocolate chips

    Measure dry ingredients and set aside. In bowl, cream margarine and sugars, then add vanilla, water and eggs. Mix thoroughly. Add dry ingredients and mix thoroughly. Spread in greased 9 x 13 pan. Sprinkle chocolate chips over dough. Press in with fingers. Place in oven for 2 minutes until slightly warm. Using a knife, run the knife through the dough up and down and backwards and forwards to create a marble effect. Return to oven to finish cooking. Remove when cake is set when you jiggle it. Enjoy!

  4. To be honest I don't really use a recipe for this one. I just kind of throw stuff in. But this is usually what I throw in.

    Taco Soup

    2-3 cans of beans (kidney, pinto, garbanzo, etc)
    1 8 oz can of tomato sauce
    1-2 c. beef broth
    chopped onions (if I'm not in a hurry I'll saute in them in olive oil first)
    1 can diced tomatoes
    1/2 can or handful of frozen corn
    1-2 T. McCormick Taco Seasoning

    Sour Cream or whipped cream

    Simmer for a little while :) 10-20 minutes add sour cream or whipped cream after your done. Or leave it out and let each person add their own.

    *It's really good topped with cheese and tortilla chips.
