March - SALADS



Hi Ladies


Tuesday, March 15th at 7:00 pm, Jodi Young is hosting Cooking Club. The theme this month is "Salad". Yum. Any salad, pasta, leafy, fruity, veggie, chicken, ... I can't wait. Come hungry.

  1. Spinach Feta Pasta Salad

    1 bag baby spinach
    1 can sliced olives
    8 oz. fresh mushrooms - sliced
    1 bag bowtie pasta
    4 oz. Feta cheese, crumbled
    1/2 small bottle Zesty Italian Dressing
    1 pkg. good seasonings Herb Garlic dressing
    1 Tbs. parmesan cheese
    1 c. mayonnaise

    Cook pasta. Combine with olives. Mix Italian dressing, Good Seasonings, mayonnaise and Parmesan chesse to form dressing. Toss with olives & pasta. Cover & refridgerate.

    Add spinach, mushrooms and feta just before serving.

  2. One more from me, I talked about this one last night, I have never made it, but I ate it and it was good. More like a dessert...

    Cookie Salad, from my friend Sara

    2 c. buttermilk
    2 small pkg. vanilla instant pudding
    16 oz. Cool Whip, thawed
    1 small can mandarin oranges, drained & chopped
    1 small can crushed pineapple
    1 pkg. fudge stripe cookies

    Beat buttermilk and pudding together. Fold in Cool Whip, oranges, and pineapple. Crush cookies, fold half in salad. Garnish with other half. Let rest in fridge for 20 min before serving. Chill leftovers.

    Lemon Vinaigrette Salad

    Romaine lettuce
    cherry tomatoes
    shredded Parmesan cheese
    toasted sliced almonds (shake them around in a skillet for a few minutes to toast them).

    Dressing-Marinate over night:

    Juice from 2 lemons
    4 cloves garlic minced
    1/2 c. canola oil (olive makes it taste different)
    1 t. salt

    Toss together with vinaigrette right before serving.

  4. Extra Special Orange Salad (It's extra special because it's sooooooo Orange flavored)

    1 large package of Orange Jello
    2 cups boiling water
    1/2 container of Orange Sherbet
    1 small can mandarin oranges

    Dissolve jello in boiling water. Stir until completely dissolved. Add orange sherbet. Stir until melted. Add mandarin oranges, gently stir to distribute. Chill for a minimum of 2 hours and serve. (Great fast set for a salad in a hurry)
